Who we are and How we started...
What We Address:
Oftentimes the founders as well as the managers who run the business are too overwhelmed and busy to fix what isn't working. They simply can't stop long enough to correct all issues themselves. And yet - it must get fixed. Further if inefficiencies lag on, it causes staffing turnover, employee frustration and labor issues, menu issues, sales reduction.
JNC addresses inefficiencies to get the business back on track or sets structure in place from the beginning that opens the operations smoothly - a structure that is capable of growing with the business for many years or longer depending upon the goals of the business.
Early Days in Food ~
Lesa started working for a non-profit group home where she learned to cook for the residents, with the only advice from the nutritionist being: "Cook them what they crave." She was going to a private catholic university in the eastern US as a double major in education and psychology minor, when a friend suggested she try this position at the group home during the summer. After cooking and all residents shared community, food and nourishment.... Lesa had to know more and she began working her way up hands on in restaurants (choosing well) - but later decided she needed to be more competitive in a mostly male industry at the time - she had to go big. 2 years later she moved to San Francisco with $200 in her pocket, a ton of passion and drive and received her culinary training at Le Cordon Bleu, internationally externed in Giaole near Chianti in Italy.
Many years Later~
Nourishing Solutions began and then renamed to JNC post marriage as a side hustle to earn extra income. With a love of complex projects and a desire to do more, the consulting started off with a variety of side projects from website and database restructuring for recipes, to ghost written menus, things easily accomplished on weekends. Through word of mouth referral and zero energy spent in advertising - it became a friend of friend introduction and meeting to advise on projects informally.
Lesa is a solutions minded chef. Over the years she kept adapting to projects, fixing what wasn't working. She realized food operators wanted more flow - less stress and yet kept making the same choices out of fatigue vs. inspiration. When companies try to push the drive to resolve long standing issues effecting many layers of the operation... they often get pushback and sometimes this approach doesn't work from within. We have seen that when someone enters from the outside - there is a great window of opportunity here and with fresh eyes - change begins to brew.
School of Life Training ~
We have 16+ years working for fine dining restaurants east and west coast, a few Michelin rated, all deeply committed to superior food and service. Another 15+ years combined with great organizations such as Ritz Carlton, Whole Foods Market, Corporate Dining in Silicon Valley, as well as demanding Master Chefs who literally kicked our culinary behinds to transcend the limitations of cuisine. And we even worked for some well meaning folks who promised a lot but honestly couldn't figure it out and wouldn't let us fix the issues when we proposed solutions....(change is scary for some) thus Nourishing Solutions now Jackson Nunes Consulting was born.
Lesa worked for a few businesses that branded themselves in excellence yet behind the scenes struggled. She had ways to solve the issues and eventually realized she could train others to do the exact same while simultaneously building a team of aware of successful business partners. Lesa is skilled at merging individual players and teams to align behind solid goals.
The mission became clear - we wanted to find and work with owners and founders who are just as engaged in the health of their vision - as we are. Finding other passion based businesses that genuinely want to learn or re-up best practices, with an inherent desire to grow, remain competitive, and thrive. It's a commitment and a desire to be the best you can be.
We have created 10 businesses from the ground up, filled with tailor made process, procedure and structures to make follow up easier and more efficient to keep the business thriving. She had many word of mouth connections / referrals and began taking consulting jobs to supplement core income as a side hustle on weekends. Gradually, over the years the supplemental income turned into a sustainable business model helping other bay area businesses.

Lesa is a formally trained, internationally externed Executive Chef and Founder with over 25 years food experience in a variety of venues: from large volume to small artisan concepts. The Team is a mixed crew of Michelin trained chefs, to savvy senior GM's to IT rockstars.

We have been on the ground - in the trenches for over 30 years collectively. We create solutions that work for your managers, and employees day to day not just the offices - that's why what we do - actually works.
A word about staffing ~
We are trained Executive Chefs, with International experience abroad, and although our skills are sharp and integrated enough to jump in and demonstrate excellent execution on proper technique in every capacity (and we do) ... as consultants we cannot cover shifts on troubleshooting accounts. It's one part legal, one part employee strategy. Let's talk - we'll explain why.
With openings it's a different set up - we are side by side -hands on -digging in and doing whatever it takes to get it off the ground on time.
In troubleshooting accounts, where personnel issues must be worked through for legal reasons ... covering shifts becomes complex and removes our ability to focus on course correction and muddies the water for your managers. Our work must be of a higher caliber - that's how we help you best. And that is our focus.
So although we are not a staffing agency.... We absolutely assist and joyfully! Write effective copy for ads, job descriptions and we write winnable copy to aid recruitment. We have been in the bay area for over 17 years and know what works for top talent.
